Target's $9 billion F&B expansion creates shelf access for emerging physical brands

The big-box pivot to grocery gives small food and beverage makers a documented path to national retail.

Source Forbes ↗

Target has grown its Food & Beverage business by $9 billion since 2019, according to Forbes, turning grocery into its primary traffic driver and creating what amounts to a category-wide shelf opening for emerging brands. The expansion makes Target a national platform for physical-product makers who previously needed distributor relationships or regional retail wins to scale.

The retailer rebuilt its F&B footprint with deliberate speed, adding shelf space, refrigerated sections, and private-label partnerships across 1,900-plus stores. Target positioned grocery as an anchor category rather than a convenience add-on, treating food as the reason customers visit rather than a fill-in purchase. That shift increased frequency, drove basket size, and required new suppliers at volume.

The mechanism works because Target sources emerging brands to differentiate from Walmart and traditional grocers. The company needs product that feels premium, local, or trend-forward without the price premium that limits purchase frequency. Small brands deliver margin advantage, story differentiation, and speed to shelf that legacy CPG cannot match. Target's buyers now actively scout regional makers, direct-to-consumer graduates, and farmers' market winners for national rollout.

For a physical-product brand, the play starts with proof of concept outside Target. The buyer wants to see sell-through data from independent retail, a regional chain, or owned e-commerce that shows repeat purchase and margin stability. Document 90-day velocity, ideally with a retailer who runs POS reporting you can export. Target's emerging-brand program requires co-packing capacity, liability insurance, and a clean label that photographs well, but the primary filter is whether the product moves when placed on a shelf.

Next, approach through Target's Open Call application or a category introduction via an existing retail partner who already shelves at Target. The application asks for sales history, production capability, and pricing structure. Be ready to deliver 30-50 units per store on a test basis, with replenishment lead time under 14 days. Target tests in clusters, typically launching in 50-100 stores in a region where the brand has existing demand or demographic fit. A Minnesota-based kombucha maker starts in Twin Cities stores; a Austin hot sauce goes into Texas first.

Price the product to leave Target 35-40% margin while staying within 20% of the category benchmark. Target will not shelf a $12 granola bar when the set averages $6, but it will test a $7.50 bar with a clear story and comparable pack size. The packaging must work in Target's environment: clean front label, readable at three feet, no explanatory text required. If the product needs a staff demo to explain, it will not survive the test.

The unlock for small brands is that Target now views F&B as a growth lever requiring new product, not a stable category managed through existing CPG relationships. The $9 billion expansion created physical space and buyer mandates that favor emerging makers who can move quickly, ship reliably, and deliver margin without the overhead of a national sales team. That is a structural shift, not a temporary program.

The takeaway
Target's $9 billion F&B growth opens shelf access for small brands with documented sell-through and 35-40% retail margin.

Your next customer won't visit your website. Their AI will.
AI assistants have quietly taken over the first step of buying — they answer from catalogs they can read and shortlist whoever can actually ship. Two questions now decide whether you exist to that buyer: can a machine read your catalog, and can you fulfill the order. Most brands fail one or both and never find out why the orders went elsewhere. The winners of this shift aren't the loudest. They're the most readable. Build for the machine that's about to do the shopping.
